大学卒業後、和食店で板前として働き始める。いきつけのラーメン店の従業員不足からお手伝いを始めたのをきっかけにラーメン店で働くようになり、そのままラーメン店「拉麺5510」を経営するまでに。

After graduating from a university, Ryuji Otaki started working for a Japanese restaurant as an itamae (a chef skilled in Japanese cuisine). He began helping his favorite ramen restaurant due to lack of workforce, which made him to open his own ramen bar “Ramen 5510” in Tokyo.
